Three Collie Farm is where the charm of farm life meets the joy of learning. Our farm is not just a place to see alpacas, sheep, puppies, donkeys, goats, and birds. It is a haven for those who want to get closer to nature, learn new skills, and experience the tranquility of rural living.

We will be offering a wide variety of classes including soap making, cheese making, culinary and other classes relating to homesteading and farming. If you have a special skill that you would like to share, please contact us!

Join Us for Hands-On Homesteading Classes at the Farm!

We’re excited to offer a variety of homesteading workshops right here on our farm, led by Dr. Nancy Rossiter, an experienced educator with over 25 years of college-level teaching and a culinary degree from FSCJ. Each class is hands-on, practical, and designed to empower you with new skills in a relaxed, farm-based setting. As we grow, we’ll be adding more workshops and welcoming guest instructors to expand our offerings.

Please Note:
This is Florida—we work with the weather, not against it! Workshops are held in a large steel building with limited air conditioning. We recommend wearing cool comfortable clothes, closed-toed shoes, and bring bug spray. We’ll do our best to keep you cool and comfortable.

After class, guests are welcome to linger on the farm and visit with our friendly animals, including Highland cows, alpacas, donkeys, sheep, goats, chickens, ducks, and geese.

Farmstead Cheesemaking: From Goat to Curd

Spend a hands-on, delicious day on the farm learning the art and science of cheesemaking—starting with the animals themselves. We’ll begin by introducing you to our goats (and dairy sheep too), exploring common dairy goat and sheep breeds, their personalities, and what it takes to care for them day to day. You’ll gain a practical understanding of dairy animal care, milk quality, and why good cheese always starts with happy, well-managed animals.

From there, we’ll move into the cheesemaking kitchen to make several fresh cheeses together, including creamy chèvre, versatile ricotta, and everyone’s favorite: fresh, stretchy mozzarella. Along the way, we’ll discuss techniques, ingredients, troubleshooting tips, and how to adapt these recipes at home.
We’ll also cover the basics of feta, yogurt, and ice cream—walking through processes, cultures, aging considerations, and equipment—so you leave with a solid foundation and the confidence to keep experimenting on your own.

Perfect for curious beginners, aspiring homesteaders, and anyone who loves good food and farm life. Expect learning, laughter, and plenty of tastes along the way.

Surrounded by open fields and fresh air, this immersive red wine class invites you to slow down, savor, and explore the depth and character of classic and unexpected reds.

Led by expert wine educator Sasha Matkovski of Crownable Beverages, the tasting is equal parts educational and inviting. Sasha will guide you through a thoughtfully curated selection of red wines, breaking down grape varieties, regions, structure, and winemaking techniques in a clear, engaging way.
